Carlo Petrini is the founder of the international Slow Food movement in Italy in 1986, which spreads and promotes local and regional gastronomic culture against Fast food and the uniformity of taste and the loss of local variants of plants and seeds.
Through its “Arca del Gusto” project, the association has registered foods in danger of extinction and through concrete actions on the affected territory it intends to recover them and give them the dignity and cultural respect they deserve.
